The garden is home to some of the initial elements of the motif which the chef has woven throughout this stunning place: migratory birds on the edge of the marsh, a barge, aromatic herbs, African and Japanese inspiration.

In the Salon des Nuages, settle in for a pre-dinner drink by the fireplace. The décor is a visual delight: velvet armchairs in shades of blue, African masks on the walls, bronze sparrows frozen in flight, caged birds and a huge mural by Olivier Masmonteil on the memory of art.
At the bar, under the glass roof, the cosy and stylish feel provides a gentle transition before the culinary adventure begins.
As diners take a seat in one of the restaurant’s two dining rooms, an eye-catching mirrored ceiling merges the worlds of above and below. Featuring shades of blue, the colour of the sky and of freedom, a peacock, butterflies and flowers, nature is a guest of honour here. Inspired by the incredible abundance of the Brière marshland and memories of previous travels, his cuisine is shaped by hyper-seasonality, the only possible choice.
The early carrots from La Ferme des Petites Mottes in Saint-Nazaire are deliciously sweet for just a few days; soon, they are replaced by other vegetables.

Despite its strong focus on the Loire Valley, the wine list also features vintages by passionate winemakers from further afield: Burgundy, the Champagne region and the Rhône Valley. As a devotee of organic and biodynamic wines, Cyril is only too keen to share his admiration for authentic terroirs, nourishing soils and the people who work the land with real respect for the living world.
