Somewhere else, here: a magical setting

When you visit chef Éric Guérin’s Michelin-starred restaurant, prepare for the ultimate sensory surprise.

The garden is home to some of the initial elements of the motif which the chef has woven throughout this stunning place: migratory birds on the edge of the marsh, a barge, aromatic herbs, African and Japanese inspiration.

The immersive experience starts here.

The dreamy experience continues inside.

In the Salon des Nuages, settle in for a pre-dinner drink by the fireplace. The décor is a visual delight: velvet armchairs in shades of blue, African masks on the walls, bronze sparrows frozen in flight, caged birds and a huge mural by Olivier Masmonteil on the memory of art.

At the bar, under the glass roof, the cosy and stylish feel provides a gentle transition before the culinary adventure begins.

As diners take a seat in one of the restaurant’s two dining rooms, an eye-catching mirrored ceiling merges the worlds of above and below. Featuring shades of blue, the colour of the sky and of freedom, a peacock, butterflies and flowers, nature is a guest of honour here. From antique furniture to works of art, it’s rather magical to cast your eyes over the myriad details.

Now, the culinary experience at La Mare aux Oiseaux’s Michelin-starred restaurant in the Loire-Atlantique region can begin.

Authentic, vibrant and sincere cuisine

The experience continues with Éric Guérin’s Michelin-starred cuisine.

Although strongly influenced by the local region, his cuisine also plays around with acidic and bitter flavours, textures and colours.

Boasting infinite contrasts, it showcases all the variations of the earth, air and water here.

Inspired by the incredible abundance of the Brière marshland and memories of previous travels, his cuisine is shaped by hyper-seasonality, the only possible choice.

The early carrots from La Ferme des Petites Mottes in Saint-Nazaire are deliciously sweet for just a few days; soon, they are replaced by other vegetables.

Nature dictates, the chef creates.

Éric Guérin’s Michelin-starred cuisine also features wild herbs and seaweed from the Guérande peninsula and gwell, a traditional fermented milk which can only be found here.

Fresh, subtle and authentic, Éric Guérin’s cuisine sensitively reinterprets the Brière marshland
and the Guérande peninsula.

Dishes feature mackerel and leek, frogs and black garlic.

Brière beef pairs up with grapefruit, foie gras goes perfectly with Kercabellec oysters.

Walnuts and hazelnuts accompany scallops and dried fruit, crab is enlivened with seasonal citrus fruit and squab is the ideal pairing for cabbage.

The restaurant’s wine list accentuates the cuisine’s balanced flavours, featuring the very best from every wine-producing region, with the ultimate focus on providing the perfect match.

Cyril Carré, an iconoclastic and self-taught sommelier, serves a wildly appealing wine list of 300 different vintages, including personal favourites and new discoveries, some of the most prestigious names and plenty of well-kept secrets.

La Mare aux Oiseaux

Despite its strong focus on the Loire Valley, the wine list also features vintages by passionate winemakers from further afield: Burgundy, the Champagne region and the Rhône Valley. As a devotee of organic and biodynamic wines, Cyril is only too keen to share his admiration for authentic terroirs, nourishing soils and the people who work the land with real respect for the living world.

Like the ultimate magic trick, the culinary experience at La Mare aux Oiseaux transcends reality.
